SAINT-ROMAIN

Saint-Romain is a Côte de Beaune commune : its vineyards are an extension of Auxey-Duresses, in a narrow valley behind Meursault. 
Sheltered by spectacular cliffs, the vines of Saint-Romain grow on the South/South-East and North/North-East slopes of a pass cut through the hillside. 

The vines are planted at an altitude of 280 to nearly 450 meters (840 to 1350 feet), which is rather high. Snow can be found in the village until late in the season. The view is superb. 

The soil consists of chalky marl containing a mixture of clay and limestone very suitable for growing Chardonnay. 

Joseph Drouhin buys the grapes from various growers. The hand-picked grapes are gently pressed. The fermentation starts naturally in oak barrels, with a moderate percentage of new oak. The wine matures in barrels for seven to eight months to develop its complexity and character. 

The wines have a lovely pale greenish-golden hue and a delicate bouquet of white flowers (honeysuckle), toasted bread, ripe yellow fruit and a hint of honey when fully developed. 

The white wines of Saint-Romain are enjoyable at a young stage but it is preferable to keep them 2 to 3 years or more before opening a bottle. 

White Saint-Romain should be served at around 13oC.
