RULLY

At the southern part of the Côte d'Or, a few miles South of Santenay, lie the vineyards of Rully. It is a lovely area, part of the Region of Mercurey. 

Both Pinot Noir and Chardonnay are grown on the brown calcareous soil, the Chardonnay being found mostly on clay and limestone. 
As in the rest of Burgundy, the continental climate, with its warm Summer and mild fall, is very favourable to the good maturity of the grapes. 
The vineyards are situated at an altitude of 250 to 370 meters (750 to 1110 feet). 

Joseph Drouhin does not own vineyards in Rully but buys grapes as well as juice. The fermentation and the ageing of the wines take place in their cellars in Beaune. Buying grapes (instead of already made wine) is preferable since it allows tight control on the quality and yield of the crop. 

The grapes are always picked by hand and then gently pressed. The juice ferments in barrels, a small percentage being of new oak. A few weeks after the malolactic fermentation is completed, the wine is racked off its lees. After several months of ageing in barrels (7 to 8 months), the wine is bottled. 

Rully is a delicious white Burgundy wine which resembles the whites from the Côte de Beaune : a luminous, golden green colour, a toasty, fruity nose, a refined, elegant body with floral and cinnamon notes. 
This exquisite wine, which goes so well with delicate fish and most shellfish, is also an excellent value.
